  • Date And Fig Chutney 2

    Ingredients

    • 3/4 c. apple cider (175 mL)
    • 3/4 c. white wine vinegar (175 mL)
    • 1/2 c. brown sugar (125 mL)
    • 1 1/2 c. dry dates, minced (375 mL)
    • 1 x Granny Smith apple, peeled, cored and cubed
    • 3 clv garlic, finely minced
    • 2 tsp grated fresh ginger (10 mL)
    • 3 x fresh figs, minced
    • 1 tsp paprika (5 mL)
    • 1/2 tsp grnd cardamom (2 mL)
    • 1/2 tsp kosher salt (2 mL)

    Directions

    1. Place the cider, white wine vinegar and brown sugar together in a stainless steel pot.
    2. Bring to a boil, stirring till the sugar has dissolved.
    3. Reduce the heat to medium and add the dry dates, Granny Smith apple, garlic and ginger.
    4. Cook for 15 min or possibly till most of the liquid has been absorbed.
    5. Stir in the fresh figs, paprika, cardamom and kosher salt.
    6. Cook for 5 min.
    7. The chutney will keep for several weeks stored in the refrigerator in an airtight container.
