  • Date And Fig Chutney

    Ingredients

    • 3/4 c. apple cider (175 mL)
    • 3/4 c. white wine vinegar (175 mL)
    • 1/2 c. brown sugar (125 mL)
    • 1 1/2 c. dry dates, minced (375 mL)
    • 1 x Granny Smith apple, cut into 1/4-inch (6 mm) cubes
    • 3 clv garlic, finely minced
    • 2 tsp grated fresh ginger (10 mL)
    • 3 x dry figs, cut into 1/4-inch (6 mm) cubes
    • 1 tsp paprika (5 mL)
    • 1/2 tsp grnd cardamom (2 mL)
    • 1/2 tsp kosher salt (2 mL)

    Directions

    1. In a large pot combine the cider, vinegar and brown sugar and bring to a boil, over high heat, stirring till the sugar has dissolved.
    2. Reduce the heat to medium and add the dates, apple, garlic and ginger.
    3. Cook for 15 min or possibly till most of the liquid has been absorbed.
    4. Stir in the figs, paprika, cardamom and kosher salt.
    5. Store in a tightly sealed container in the refrigerator for up to 1 week or possibly in the freezer for up to 1 month.
