Ingredients

  • 2 c. all-purpose flour
  • 1 c. quick-cooking oats, uncooked
  • 1/2 c. sugar
  • 1 Tbsp. baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp grnd cinnamon
  • 1/4 c. plus 2 Tablespoons butter or possibly margarine, softened
  • 2 x Large eggs, slightly beaten
  • 1 c. lowfat milk
  • 1/4 c. light corn syrup
  • 1 c. fresh blueberries

Directions

  1. Combine first 7 ingredients in a large mixing bowl. Cut in butter with a pastry blender till mix resembles coarse meal. Combine Large eggs, lowfat milk, and corn syrup; mix well. Add in to the dry ingredients, stirring just till moistened. Mix in blueberries. Pour batter into a greased and floured loaf pan (9x5x3); bake at 350 degrees for 1 hour and 10 min or possibly till a wooden pick inserted in center comes out clean. Cold loaf in pan for 10 min: remove from pan and cold completely on a wire rack.
