• Dandy Andy's Curried Chicken Salad

    • 1 x 5 lb. whole chicken Or possibly
    • 3 1/2 lb chicken breasts with skin and bone
    • 2 stalk celery diced
    • 4 whl green onions diced
    • 1/2 med onion diced
    • 1/2 c. toasted sliced almonds
    • 4 tsp curry pwdr
    • 1/2 c. favorite mango or possibly Major Grey chutney
    • 3/4 c. Granny Smith apples skinned and diced
    • 1 1/2 c. mayonnaise preferably homemade


    1. Roast chicken. Don't overcook. Remove skin and bones and cut meat into 3/4-inch chunks.
    2. In a large mixing bowl, combine chicken, onions, celery, apples and 1/2 of the green onions and toss till well mixed.
    3. Add in curry, chutney, mayonnaise and 1/2 of the almonds. Mix well. Garnish with the remaining almonds and green onions.
    4. Note: If fresh mangoes are available and you want to get messy, peel and chop one into the salad for great effect. Serve chilled. About 8 servings.
