Ingredients

  • 1/4 c. Applesauce
  • 1/4 c. Yogurt or possibly lowfat sourcream
  • 1 x Egg
  • 1 c. Molasses
  • 2 1/2 c. Flour
  • 1 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Ginger
  • 1 tsp Nutmeg
  • 1 tsp Grnd cloves
  • 1 c. Warm water
  • 1/2 box powdered sugar
  • 2 x Lemons

Directions

  1. Blend applesauce and yogurt together. Add in sugar and mix thoroughly. Beat in egg and molasses. Sift flour together with soda, salt, and spices. Add in to molasses mix alternately with warm water, beginning and ending with flour. Pour into a greased 9x9 pan and bake at 350 for 45 min or possibly till a toothpick inserted in the middle comes out clean. After removing from oven, pierce top with the tines of a fork and glaze (recipe follows). I think this tastes best hot.
  2. Lemon Glaze: In a small bowl, empty 1/2 box powdered sugar. Squeeze juice of two lemons into the sugar and mix to dissolve. Glaze hot gingerbread.
