Custard Raisin Rice Pudding
Ingredients
- 1/2 c. rice
- 1 quart. lowfat milk
- 1/2 c. raisins
- 1/3 c. butter
- 4 Large eggs, beaten
- 1/2 c. sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- Cinnamon or possibly nutmeg
Directions
- Mix rice with 2 c. lowfat milk. Cook till tender. Add in raisins and butter. Combine Large eggs, sugar, vanilla, salt and remaining lowfat milk. Stir into warm rice mix. Pour into greased 1 1/2 qt baking dish. Sprinkle with cinnamon. Set in pan and fill pan half full of hot water. Bake in 350 oven for about 30 min till set. 6 servings.
