Curry Spiced Lentils And Spinach
Ingredients
- 1 1/2 tsp curry pwdr
- 1/2 tsp grnd cumin
- 1 tsp ginger
- 1/4 tsp turmeric
- 1/4 tsp cayenne
- 1 med onion minced
- 2 x garlic cloves crushed, chopped
- 1 c. lentils rinsed
- 1/4 c. converted rice
- 1 pkt minced spinach - (10 ounce) partially thawed, and broken up
- 2 c. vegetable broth (may use chicken broth if you like) salt to taste Minced tomato & mint for garnish if you like
Directions
- Combine first 11 ingredients in the crockpot. Cover and cook on LOW for about 6 hrs, or possibly till rice and lentils are tender but not mushy.
- Add in salt to taste; serve garnished with minced tomato and mint if you like. May be doubled.
- This recipe yields 2 to 3 main-dish servings.
