Curry Mango Chicken
Ingredients
- 1 Tbsp. vegetable oil
- 4 x boneless, skinless Chicken breasts, cut in cubes
- 1 med onion, minced
- 4 tsp mild Curry Paste
- 6 Tbsp. water
- 1 c. canned diced tomatoes
- 1 Tbsp. Mango Chutney Cooked rice or possibly Naan bread
- 1 Tbsp. minced fresh cilantro
Directions
- Heat oil and brown Chicken. Add in onion and saute/fry till translucent/soft. Add in curry paste, water and tomatoes. Cover and simmer 20 min stirring occasionally. Sir in mango chutney. Serve over rice or possibly with Naan bread. Garnish with cilantro.
- Serves 4.
