  • Curried Shrimps Over White Rice

    Ingredients

    • 2 tsp salsa verde or Sofrito or substitute with 2 tbs each (diced green and red peppers, jalapeno pepper, chopped cilantro)
    • ¼ cup water
    • 3 tsp curry powder
    • 2 tsp olive or vegetable oil
    • 1 tsp minced garlic
    • ¼ cup onion (chopped)
    • Salt and pepper to taste

    Curried Shrimps Over White Rice

    This great recipe was given to me years ago by a friend from Trinidad. You could taste the spices in the recipe but at a moderate level, it is not extremely spicy. The amount of spices and seasonings is just perfect.

    Seasoned Shrimps

    Ingredients

    2 lbs shrimps (shelled and cleaned), you may use fresh or already cooked shrimps—I used already cooked shrimps in this recipe.

    Cook

    Season shrimps with salsa verde or sofrito or season with 2 tbs each diced green and red peppers, jalapeno pepper, and chopped cilantro. Set aside.

    Mix curry powder with ¼ cup of water. Set aside.

    In a skillet, heat oil over medium heat. Add garlic and onion. Sauté for 1 minute. Add seasoned shrimps and sauté. Add salt and pepper. Add the curry mixture.

    Cook shrimps for 1 minute if using already cooked shrimps. If using fresh shrimps cook until done (usually when they turn pink.) Do not overcook.

    Serve over white rice and garnish with cilantro if desired.
