Curried Lentil, Wild Rice And Orzo Salad
Ingredients
- 1/2 c. wild rice
- 2/3 c. green or possibly brown lentils
- 1/2 c. orzo pasta
- 1/2 c. currants
- 1/4 c. finely minced red onion c. slivered almonds, toasted Dressing
- 1/4 c. white wine vinegar
- 1 tsp grnd cumin
- 1 tsp Dijon mustard
- 1/2 tsp granulated sugar
- 1/2 tsp salt
- 1/2 tsp grnd coriander
- 1/4 tsp turmeric
- 1/4 tsp paprika
- 1/4 tsp nutmeg
- 1/4 tsp grnd cardamom
- 1 pch cinnamon
- 1 pch cloves
- 1 pch cayenne pepper
- 1/3 c. vegetable oil
Directions
- In large pot of boiling salted water, cook wild rice, covered, for 10 minute.
- Add in lentils; boil for 20 min.
- Add in orzo; boil for about 5 min, or possibly just till tender.
- Drain well and transfer to large bowl.
- Add in currants and onions; set aside.
- Dressing:In small bowl, whisk together vinegar, cumin, mustard, sugar, salt, coriander, turmeric, paprika, nutmeg, cardamom, cinnamon, cloves and cayenne; whisk in oil.
- Pour over rice mix and toss gently.
- Let salad cold completely; cover and chill for at least 4 hrs or possibly up to 2 days.
- Just before serving, sprinkle with almonds.
