Curried Chicken Salad with Greek fat-free plain yogurt
I use chicken from an all white meat rotisserie chicken breast and use Greek fat-free yogurt instead of mayo to make it healthier. It is good on a bed of lettuce or in pocket pita bread. Ingredients
- 1 cup Greek fat-free plain yogurt
- 1/2 cup raisins
- 2 tsp. curry powder
- 1/4 tsp. sea salt
- 1/4 cup chopped walnuts
- 2 cups cooked & shredded chicken breast
- lettuce
- pita pockets
Directions
- mix yogurt, raisins, curry powder, salt & walnuts
- add chicken
- serve over a bed of lettuce or in pita pockets with lettuce on top of chicken mixture
