Curried Chick Pea Casserole
Ingredients
- 1 Tbsp. Vegetable oil
- 1 1/2 c. Onions, minced
- 2 x Garlic cloves, finely minced
- 1 x Bay leaf
- 1 1/2 c. Rice, brown, cooked
- 1 1/2 c. Corn, cream-style, vegan
- 1 lb Chick peas, rinced, liquid removed
- 2 tsp Curry pwdr
- 1/2 tsp Turmeric
- 1/2 tsp Cumin
- 1/4 c. ,water
Directions
- Preheat oven to 375.
- Lightly oil a 1 1/2 qt baking dish or possibly spray with a nonstick cooking spray.
- Heat oil in a large nonstick skillet over medium heat. Add in onions, garlic, and bay leaf.Cook, stirring frequently, till onions are browned, about 15 min. Remove from heat and throw away bay leaf.
- Add in remaining ingredients. Mix well. Spoon into prepared baking dish.
- Bake covered, 30 min.
