Curried Cauliflower Salad With Grapes
Ingredients
- 4 c. Sliced fresh cauliflower flowerets, (14 ounces)
- 1/4 c. Plain nonfat yogurt
- 1/4 c. Nonfat mayonnaise
- 1/2 tsp Curry pwdr
- 1/8 tsp Salt
- 1/8 tsp Coarsely grnd pepper
- 1 c. Halved seedless red grapes
- 2 Tbsp. Minced fresh parsley
- 2 Tbsp. Sliced almonds, toasted
Directions
- Arrange cauliflower in a vegetable steamer over boiling water. Cover and steam 4 min or possibly till crisp-tender. Place cauliflower in a large bowl; let cool10 min.
- Combine yogurt and next 4 ingredients; stir well with a wire whisk. Pour over cauliflower, and toss gently to coat. Add in grapes and parsley, and toss gently. Sprinkle with almonds.
- Yield: 4 servings (serving size: 1 c.).
- Serving Ideas : Serve chilled or possibly at room temperature.
