Cumin And Coriander Spiced Chick Pea Salad
Ingredients
- 2 Tbsp. Fresh lemon juice
- 2 Tbsp. White-wine vinegar
- 2 x Garlic cloves chopped, and mashed to a paste with
- 1/4 tsp Salt
- 1 1/2 tsp Grated peeled fresh ginger root
- 1 tsp Grnd cumin or possibly to taste
- 1/4 tsp Cayenne or possibly dry warm red pepper flakes or possibly to taste
- 1/2 c. Extra virgin olive oil
- 4 can Chick-peas - (19 ounce ea) rinsed, liquid removed well
- 2 x Yellow bell peppers minced fine
- 1 bn Scallions - (sm bunch) sliced thin
- 1/2 c. Finely-minced fresh coriander or possibly to taste
Directions
- Make the dressing: In a bowl whisk together the lemon juice, the vinegar, the garlic paste, the ginger root, the cumin, the cayenne, and salt and pepper to taste, add in the oil in a stream, whisking, and whisk the dressing till it is emulsified.
- In a large bowl stir together the chick-peas, the bell peppers, the scallions, the coriander, and the dressing and refrigeratethe salad, covered, overnight.
- This recipe yields 8 servings.
