  • Cucumbers And Country Ham Salad

    Ingredients

    • 1 1/2 c. Peanut oil
    • 1 1/2 Tbsp. Creamy peanut butter
    • 2 tsp Soy sauce
    • 1/2 c. Cider vinegar
    • 2 tsp Dijon mustard
    • 2 tsp Freshly minced herbs Salt and pepper to taste
    • 8 x Cucumbers peeled
    • 1 x Red leaf lettuce head
    • 6 ounce Cooked country ham julienned
    • 3/4 c. Unsalted, roasted peanuts

    Directions

    1. In blender or possibly food processor make a dressing of peanut oil, peanut butter, soy sauce, vinegar, mustard, and herbs. Add in salt and pepper if needed. Split peeled cucumbers into halves and seed. Cut cucumbers into spaghetti-like strands. Portion the cucumber strands around the borders of 8 chilled plates. Place the lettuce leaves in the center of each of the plates. Arrange the country ham strips over the lettuce. Spoon 3 to 4 Tbsp. of dressing over each salad. Top each chilled salad with peanuts.
    2. This recipe serves 8.
