Cucumber "Noodles" With Tomato Salsa

Ingredients

  • 2 lb (about 2 large) seedless Cucumbers
  • 1 Tbsp. Salt
  • 1 lb Plum tomatoes, peeled, Seeded, and minced
  • 1/4 c. Thinly sliced scallion
  • 1 lrg Garlic clove, chopped
  • 1 x Pickled jalapeno pepper, Seeded and chopped
  • 1 Tbsp. White-wine vinegar
  • 1/4 tsp Sugar

Directions

  1. With a sharp knife cut cucumbers lengthwise into 1/8 inch thick "noodles"
  2. about 1/2 inch wide. In a bowl toss with salt and let stand for 10 minutes.
  3. Make the salsa while cucumber noodles are standing: stir together the salsa ingredients.
  4. Serves 6.
  5. Drain cucumbers in a colander, rinse under cool water, pat dry on paper towels. Just before serving, toss to combine.
