Cucumber Mousse And Fish Salad

Ingredients

  • 2 x cucumbers
  • 1 env unflavored gelatin
  • 1/2 c. cool water
  • 1 pkt (3 ounce) lime Jello
  • 1 1/4 c. boiling water
  • 1/2 c. lemon or possibly lime juice
  • 2 tsp onion juice
  • 3/4 tsp salt
  • 1/8 tsp cayenne
  • 1/2 c. minced celery
  • 1/4 c. minced parsley
  • 1/2 pt heavy cream, whipped fish salad

Directions

  1. Peel cucumbers, remove seeds and grate coarsely. Soften gelatin in cool water. Dissolve lime gelatin pwdr in boiling water, and stir in plain gelatin mix, lemon juice, onion juice, salt, cayenne, and prepared cucumbers. Refrigeratetill thickened; then mix in celery, parsley and lastly, whipped cream. Pour into large oiled ring mold, and refrigeratein fridge till set. Un-mold, and fill center with fish salad.
