Cucumber Molded Salad

- 2 pkt lime-flavored gelatin - (3 ounce ea)
- 1/4 tsp salt
- 1 1/2 c. boiling water
- 1 1/2 c. cool water
- 1 Tbsp. lemon juice
- 1/2 c. mayonnaise or possibly salad dressing
- 1/2 c. lowfat sour cream
- 1 1/2 c. minced peeled seeded cucumbers
- 2 Tbsp. chopped onion
- 1 tsp chopped fresh dill
Directions
- Place the gelatin and salt in a large bowl. Add in the boiling water and stir till completely dissolved, 2 min. Stir in the cool water and lemon juice. Chill till slightly thickened (it should have the consistency of unbeaten egg whites), about 1 1/4 hrs.
- Mix the mayonnaise and lowfat sour cream in a small bowl till well blended. Stir into the thickened gelatin. Chill till thickened (a spoon drawn through leaves a definite impression), about 15 min. Stir in the cucumbers, onion and dill. Pour into a 5-c. mold. Chill till hard, 4 hrs. Unmold. Garnish as desired.
