  • Cucumber Molded Salad

    Ingredients

    • 2 pkt lime-flavored gelatin - (3 ounce ea)
    • 1/4 tsp salt
    • 1 1/2 c. boiling water
    • 1 1/2 c. cool water
    • 1 Tbsp. lemon juice
    • 1/2 c. mayonnaise or possibly salad dressing
    • 1/2 c. lowfat sour cream
    • 1 1/2 c. minced peeled seeded cucumbers
    • 2 Tbsp. chopped onion
    • 1 tsp chopped fresh dill

    Directions

    1. Place the gelatin and salt in a large bowl. Add in the boiling water and stir till completely dissolved, 2 min. Stir in the cool water and lemon juice. Chill till slightly thickened (it should have the consistency of unbeaten egg whites), about 1 1/4 hrs.
    2. Mix the mayonnaise and lowfat sour cream in a small bowl till well blended. Stir into the thickened gelatin. Chill till thickened (a spoon drawn through leaves a definite impression), about 15 min. Stir in the cucumbers, onion and dill. Pour into a 5-c. mold. Chill till hard, 4 hrs. Unmold. Garnish as desired.
    3. This recipe yields 10 servings.

      I looked at several recipes for lime gelatin with cucumber recipes before settling on this one. I am glad it was the choice. Several others had reviews saying those recipes were blah, or too sweet, or on and on. But this recipe is just the right balance of sweet and sour. It is a light, refreshing gelatin salad with a nice crunch. I had to sub Greek yogurt for sour cream and a teaspoon of dry dill weed for fresh dill, but everything else was just as stated.
