Cucumber Mirin Salad
Ingredients
- 1/4 c. Mirin
- 1 Tbsp. Rice wine vinegar
- 1/2 tsp Sesame oil
- 1 Tbsp. Pickled ginger (gari) julienned
- 1 Tbsp. Finely-sliced scallions
- 2 med English cucumbers thinly sliced, (if using regular cucumbers peel and seed)
Directions
- In a bowl, whisk together the mirin, vinegar, oil, pickled ginger, and scallions. Toss the cucumbers in the dressing about 15 min before serving.
- This recipe yields 4 servings.
