Cucumber, Mango And Black Bean Salad
Ingredients
- 1 x seedless cucumber washed, and cut into 1/2" dice
- 1/2 med mango cut 1/3" dice
- 1/2 c. liquid removed and rinsed black beans
- 2 Tbsp. fresh lime juice
- 2 Tbsp. orange juice
- 1 Tbsp. finely-minced fresh cilantro
- 3/4 tsp salt
- 1 x jalapeno pepper seeded, and finely minced
Directions
- In a large bowl, toss all ingredients. Let stand 10 mintues for flavors to blend.
- This recipe yields 4 servings.
- Comments: Mangoes and black beans are high in nutrient-dense carbs and fiber, so we added cucumber to reduce the overall carb count.
