Ingredients

  • 6 x cucumbers
  • 1 sm bermuda onion -- thinly sliced sea salt -- to taste fresh grnd pepper optional -- to taste
  • 3 Tbsp. mint -- minced
  • 3 Tbsp. parsley -- minced
  • 3 Tbsp. chives -- minced
  • 1/2 lb feta cheese -- fresh , crumbled
  • 2 Tbsp. extra virgin extra virgin olive oil -- organic
  • 1 Tbsp. rice wine vinegar

Directions

  1. Peel and thinly slice the cucumbers. Place the slices in a container and refrigeratefor at least 30 min. Peel and thinly slice the onion. Place the onion slices in a container, cover with cool water, and refrigeratefor 30 min. When you are ready to prepare the salad, drain and dry the onion slices and layer them with the cucumber on a large platter. Season with sea salt, freshly grnd pepper, and the minced fresh herbs. Scatter the cheese on top. Whisk the extra virgin olive oil and vinegar together and drizzle it proportionately on the salad.
