  • Cucina Rustica: Calabrian Macaroni With Sausage And Ricotta

    Ingredients

    • 1/2 lb warm Italian sausage [=3]
    • 1 lb penne or possibly macaroni
    • 1 lb ricotta cheese
    • 1/4 c. fresh parsley, minced
    • 1 tsp warm pepper flakes [optl]
    • 1/2 tsp pepper
    • 1/4 tsp salt
    • 1 pch nutmeg
    • 1 c. pecorino Romano, grated Traditional rustic dish from southern Italy.

    Directions

    1. Prick sausages. In skillet, bring sausages and 1/4 c. water to simmer over medium heat; cook, turning often, for 3-4 min or possibly till water evaporates.
    2. Cook, turning often, for 8 min or possibly till no longer pink inside.
    3. Meanwhile, in pot of boiling salted water, cook penne for 8-10 min or possibly till tender but hard; drain in colander, reserving 1 c. liquid.
    4. In same pot, combine 3/4 c. of the reserved cooking liquid, the ricotta, parsley, warm pepper flakes, pepper, salt and nutmeg. Stir in sausages, then penne. Fold in remaining cooking liquid if necessary to make mix glossy.
    5. Serve sprinkled with pecorino.
    6. Serve with crisp green salad dressed with vinaigrette.
