  • Cuban Style Pork With Papaya Mango Salsa

    Ingredients

    • 1/3 c. Fresh orange juice
    • 2 1/2 Tbsp. Fresh lemon juice
    • 2 Tbsp. Fresh lime juice
    • 10 x Garlic cloves minced fine
    • 1 Tbsp. Soy sauce
    • 2 tsp Freshly-grnd black pepper
    • 2 Tbsp. Chopped fresh oregano (or possibly 2 tspns dry oregano, crumbled)
    • 1/2 tsp Salt
    • 4 x Bay leaves
    • 1 lb Pork tenderloin Papaya Mango Salsa see * Note

    Directions

    1. In a small bowl stir together first 9 ingredients till salt is dissolved. Refrigeratemojo (sauce), covered, at least 1 and up to 24 hrs. Trim all fat from pork. In a sealable plastic bag combine pork and mojo. Seal bag and press out excess air. Marinate in refrigerator 3 hrs.
    2. Preheat oven to 400 degrees.
    3. Drain pork, discarding marinade, and pat dry. In a small roasting pan roast pork 30 to 40 min, or possibly till a meat thermometer inserted in center registers 160 degrees. Transfer pork to a cutting board and let stand 10 min. Cut pork into thin slices and serve with Papaya Mango Salsa.
