  • Cuban French Toast With Tropical Fruit Salsa

    Ingredients

    • 1 lrg loaf of Cuban bread cut into 4 equal pcs crosswise
    • 6 x Large eggs
    • 1/4 c. sugar
    • 1 quart whole lowfat milk
    • 1/2 tsp grnd cloves
    • 1/2 tsp grnd cardamom
    • 1 tsp freshly-grnd canela (cinnamon)
    • 1/4 c. diced kiwi
    • 1/4 c. diced mango
    • 1/4 x papaya diced
    • 1 Tbsp. finely-minced mint
    • 1/2 c. orange juice
    • 4 tsp butter Powdered sugar for garnish

    Directions

    1. In a large bowl, beat the Large eggs with the sugar and lowfat milk. Add in the cloves, cardamom, and canela and place mix in shallow pan.
    2. In another bowl, combine kiwi, mango, papaya, mint, and orange juice and set aside.
    3. Have a nonstick pan getting hot. Soaking each piece of bread in egg mix till bread has absorbed some of liquid, about 30 seconds.
    4. Add in 1 tsp. of butter to the pan and cook bread on each side for 4 min till golden. Repeat process for the remaining bread.
    5. Serve on plate with tropical salsa on top and sprinkle powdered sugar on each.
    6. This recipe yields 4 servings.
