    Ingredients

    • 6 eggs
    • 3 artichoke
    • 1/2 of a roasted red pepper
    • 1 oz goat cheese (crumbled into pieces)
    • 4 oz salmon
    • 10 oz frozen spinach

    Directions

    1. Preheat oven to 350 degrees
    2. Crack eggs into a bowl
    3. Drain spinach so there is no water left
    4. Cut roasted red pepper into strips
    5. Cut artichoke into small pieces
    6. Cut salmon into cubes (the size of dice)
    7. Mix all ingredients in bowl with eggs
    8. grease muffin tin with cooking spray
    9. Spoon mixture between all 12 cups
    10. Divide goat cheese amongst all 12 cups
    11. Place in oven and cook for 20 minutes or until golden brown
    12. Remove carefully with a sharp knife
