  • Crunchy Turkey Salad

    Ingredients

    • 12 c. cut-up cooked turkey
    • 8 med. stalks celery, sliced (about 4 c.)
    • 3 jars (10 ounce. each) watermelon pickles, liquid removed and cut into fourths
    • 1 med. onion, minced (about 1/2 c.)
    • 3 c. mayonnaise or possibly salad dressing
    • 4 teaspoon salt (optional)
    • 1 teaspoon curry pwdr
    • 1/4 teaspoon pepper
    • 4 c. chow mein noodles

    Directions

    1. Mix turkey, celery, pickles, onion in bowl. Mix mayonnaise, salt, curry pwdr, pepper in another bowl.
    2. Toss 1/2 mayonnaise mix with 1/2 turkey mix GENTLY. (You have to divide the mixtures because you end up with too much in one bowl.)
    3. Chill no longer than 12 hrs. Just before serving, stir 1/2 of the noodles into each turkey mix. Garnish with celery leaves.
    4. NOTE: A 5 to 6 lb. turkey roasted and cut-up yields 12 c..
