Crunchy Tuna Salad In Pepper Boats
Ingredients
- 2 lg. peppers, halved lengthwise
- 2 (6 1/2 ounce.) cans tuna, liquid removed & flaked
- 1/2 c. salad dressing or possibly mayonnaise
- 1 carrot, minced
- 1 celery stalk, minced
- 1/2 med. red onion, minced
- 1/4 c. minced pecans (opt.)
Directions
- Place pepper halves on plate. Microwave on high for 60 seconds. Chill. Combine remaining ingredients; chill. Spoon tuna mix into pepper halves to serve. 4 servings.
