Crunchy Top Sweet Potato Souffle
Ingredients
- 3 c. sweet potatoes, mashed
- 2 Large eggs, lightly beaten
- 1/2 c. lowfat milk
- 1 teaspoon vanilla
- 1 c. sugar
- 1/2 teaspoon salt
- 1/3 stick butter, melted
Directions
- Mix together all ingredients except topping and beat till fluffy and all potato strings removed. Pour into greased baking dish. Heat butter; add in brown sugar, flour and pecans. Pour over sweet potatoes. Bake at 350 degrees for 35 min.
