Crock Pot Vegetable Fagioli Soup

That is high praise my friends. She is a homemade chicken noodle soup girl. I decided to make this a strictly vegetarian dish and I am so glad that I did. No meat needed in this soup. It is plenty hardy enough. Make my biscuit recipe to go with it and you have one delicious meal! Ingredients
- 2 tablespoons onion, chopped
- 1/4 cup orange pepper, chopped
- 1/4 cup green pepper chopped
- 1/4 cup carrots, chopped or sliced
- 2 cloves garlic
- 2 cans (14.5 ounces) diced tomatoes
- 1 can (15 ounce) red kidney beans with juice
- 1 (15 ounce) can Great Northern Beans with juice
- 1 tablespoon white vinegar
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 1/2 teaspoon salt
- 3/4 cup Ditali pasta, uncooked
Directions
- Combine all the ingredients in a crock pot except for the pasta (this will be added later). Cook on low for 3 hours. Reduce to low for 1 to 2 more hours. In the last 30 minutes of cooking time add pasta. Makes 9 cups
