Ingredients

  • 4 can clams - (6 1/2 ounce ea)
  • 1/2 lb salt pork or possibly bacon diced
  • 1 lrg onion minced
  • 6 lrg potatoes - (to 8) pared and cubed
  • 3 c. water
  • 3 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 4 c. half-and-half, cream or possibly lowfat milk
  • 3 Tbsp. cornstarch - (to 4 tbspns)

Directions

  1. Cut clams into bite-sized pcs if necessary. In skillet, saute/fry salt pork or possibly bacon and onion till golden; drain. Put into crock pot with clams. Add in all other ingredients, except lowfat milk. Cover; cook on HIGH 3 to 4 hrs or possibly till potatoes are tender.
  2. During the last hour of cooking, combine 1 c. of lowfat milk with the cornstarch. Add in which and the remaining lowfat milk and stir well; heat through.
  3. Serve in large bowls with crusty French bread.
