  • 1/2 lb Thick bacon slices
  • 3 Tbsp. Extra virgin olive oil
  • 2 1/2 x Onions - minced
  • 3 x Garlic cloves - crushed
  • 5 lrg Tomatoes - peeled, seeded, minced
  • 1 Tbsp. Dry tarragon
  • 1/4 tsp Red pepper flakes Salt and pepper
  • 4 Tbsp. Parsley - minced
  • 1 lb Fettucine Parmesan cheese


  1. Directions: Fry the bacon till crisp and drain on paper towels. Pour out excess fat from pan, except 1 Tbsp. and add in the extra virgin olive oil to pan. Add in onions and saute/fry about five min, then add in garlic and tomatoes. Simmer for a few min and then add in the tarragon, red pepper flakes, salt and pepper. Simmer for another half an hour, stirring occasionally. Add in parsley and simmer for five min.
  2. Crumble bacon and stir into sauce. Pour sauce over pasta and mix. Top with parmesan cheese.
