  • Crispy Oven Fried Chicken

    Ingredients

    • 1/2 teaspoon butter
    • 3 slices soft white bread, torn in pcs
    • 1 ounce. grated Parmesan cheese
    • 2 tbsp. yellow cornmeal
    • 1 lg. garlic clove, pressed
    • 1 1/2 teaspoon sage
    • 1/4 teaspoon cayenne pepper
    • 1/4 teaspoon salt
    • 2 teaspoon extra virgin olive oil
    • 3 pound frying chicken, cut into pcs
    • 3 tbsp. Dijon mustard
    • 1 1/2 teaspoon water

    Directions

    1. Place oven rack in center of oven and preheat to 375 degrees. Lightly grease a baking pan with butter.
    2. Combine bread, cheese, cornmeal, garlic, sage, cayenne pepper and salt in a food processor or possibly blender. Process or possibly blend till mix is fine crumbs. Add in oil and mix just sufficient to moisten crumbs. Transfer crumbs to a shallow 9" pie plate.
    3. Remove skin and fat from chicken pcs, except wings. Stir mustard and water together in small bowl and brush mix on chicken pcs. Dip chicken in crumb mix to coat with even layer of crumbs.
    4. Arrange chicken in pan, meatier side up. Bake till crisp and golden brown, about 55 min. Can serve warm or possibly at room temperature. Makes 4 servings.
