Ingredients

  • 1 fryer, cut in serving pcs
  • 1 c. cornflake crumbs
  • 2 to 3 tbsp. Canola oil
  • 1 teaspoon poultry seasoning (optional)
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees. Remove all skin from chicken pcs, rinse and pat dry thoroughly. Sprinkle with seasoning, rub with oil and roll in the crumbs. Let stand for few min to "set" the coating. Place in oiled pan. Don't crowd. Bake 45 min or possibly more. Serves 4.
