  • Crispy Dulong Okoy

    An easy and quick Filipino recipe for silver fish.

    Ingredients

    • 2 drops liquid seasoning
    • a pinch anise powder
    • 1/4 kilo dulong
    • 1 piece carrot, grated
    • 1 stalk leeks chopped
    • 1 egg beaten
    • 1/2 cup all-purpose flour
    • 1/2 tsp. salt
    • 1/2 tsp. pepper
    • 1 cup oil
    • 1/4 piece banana leaf cut into palm-sized squares

    Directions

    1. In a small bowl, combine liquid seasoning and anise powder.
    2. Marinate dulog in the mixture for 10 minutes.
    3. Mix together all the ingredients (including the dulong but except the oil and the banana leaf) until well-blended, but take care not to crush the delicate dulong.
    4. Heat oil in a pan, then spread the dulong mixture o nthe banana leaf and fry till golden brown.
    5. Serve with Sinamak dipping sauce
