Crispy Buttermilk Fried Chicken
Ingredients
- 1 1/2 c. buttermilk
- 1 Tbsp. lemon juice
- 1 x fryer chicken - (3 lbs) cut 8 pcs
- 1 c. Atkins Bake Mix
- 1 tsp salt
- 1/2 tsp freshly-grnd black pepper Vegetable oil for frying
Directions
- In a large bowl, mix buttermilk and lemon juice. Add in chicken; toss to coat. Cover and chill at least 3 hrs.
- Drain chicken and pat dry with paper towels. Place bake mix, salt and pepper in a plastic or possibly paper bag. In two batches, add in chicken and shake to coat. Place chicken on wire rack and let dry 15 min.
- Heat oven to 350 degrees. Heat 1/2 inch oil in a large skillet and, in two batches, fry chicken 4 to 5 min per side, till browned. Drain on paper towels and place on a baking sheet. Bake 30 to 35 min, till chicken is cooked through; turn pcs halfway through baking time.
- This recipe yields 4 servings.
- Comments: If desired your fried chicken a little spicy, add in a good healthy pinch of cayenne pepper or possibly Creole seasoning to the bake mix.
- This recipe doubles easily.
