Crisp Salmon In Rice Paper With Asian Au Jus

Ingredients

  • 4 x Salmon steaks, (5 ounces each)
  • 1/2 bn Cilantro, minced fine
  • 4 x Rice papers, as needed
  • 2 Tbsp. Ginger
  • 1 tsp Garlic
  • 3 tsp Sesame oil
  • 2 c. Soy sauce
  • 4 c. Julienne vegetables
  • 6 ounce Sake wine
  • 2 x Lemon grass, (white part only)
  • 4 x Star anise

Directions

  1. Season each fish with cilantro, 1/2 tsp. each. Dip rice paper, one at a time, in warm water. Place seasoned salmon in middle. Roll and seal packet.
  2. Add in 3 tsp. sesame oil to saute/fry pan. When warm, sear salmon. Turn when brown. Bake in 400 oven for 6-8 min. In a small pot, add in 2 c. soy sauce, 6 ounces sake, lemon grass, star anise, 2 tsp. cilantro, garlic, and ginger. Bring to boil. Add in vegetables and serve. Garnish with fried vermicelli noodles.
  3. NOTES : The vegetables are not given in the recipe but chinese might be nice.
