  • Crepe Filling For Crepes Con Queso

    Ingredients

    • 1 Tbsp. Butter
    • 1 lrg Onion, coarsely minced
    • 1 x Green bell pepper, coarsely minced
    • 1 x Red bell pepper, coarsely minced
    • 1 bn Green onion, sliced
    • 4 x Cloves garlic, chopped
    • 2 can (4-1/2 ounce) minced green chiles
    • 1 1/2 c. Whipping cream
    • 4 ounce Swiss cheese, 1 c. shredded
    • 2 1/2 c. Skinned and boned chicken breast halves cooked and shredded
    • 2 tsp Cajun seasoning
    • 1/4 tsp Salt
    • 1/4 tsp Pepper

    Directions

    1. Heat butter in a large skillet over medium heat; add in minced onion and next 4 ingredients, and cook, stirring constantly, 5 min or possibly till tender.
    2. Stir in chiles and whipping cream; bring to a boil. Reduce heat, and simmer 15 min. Stir in cheese and remaining ingredients; cook 3 min.
    3. Yield 4 c..
