  • 1 med onion minced
  • 1 sm green bell pepper minced
  • 6 med potatoes diced
  • 2 lrg garlic cloves minced
  • 2 med tomatoes peeled, minced
  • 1 tsp salt or possibly more
  • 1/2 tsp fresh grnd black pepper
  • 1/2 tsp red cayenne pepper
  • 1 tsp sugar
  • 1 Tbsp. fresh chopped parsley
  • 36 med okra pods sliced 1/2" thick


  1. Heat some oil in a skillet, add in onion, bell pepper and garlic, cook till onion is thoroughly wilted and transparent, about 10 min. Add in tomatoes, salt, black pepper, cayenne, sugar, parsley and potatoes. Stir till combined, cook till potatoes are fork tender. Add in okra and stir till combined. Cover and cook till okra is tender about 20 min, stirring often. Serve warm.
