Ingredients

  • 2 1/2 c. Sugar
  • 1 c. Water
  • 1 c. Green creme de menthe
  • 6 Tbsp. Liquid fruit pectin

Directions

  1. Ea mint sprigs Bring sugar, creme de menthe and water to a boil in a saucepan. Stir constantly till sugar is dissolved. Add in pectin and boil 1 more minute, stirring constantly. Remove from heat and skim off any foam.
  2. Plunge sprigs of mint into boiling water for 1 minute and place a sprig in each sterilized jelly jar. Pour jelly into jars. Seal withparaffin.
