  • Creme De Menthe Cheesecake Squares

    Ingredients

    • Crust-----
    • 9 ounce Pkg Chocolate Wafers-crushed (1 3/4 c.)
    • 1/2 c. Unsalted Butter -- melted Filling-----
    • 16 ounce Cream Cheese -- softened
    • 1/2 c. Lowfat sour cream
    • 4 x Large eggs
    • 2/3 c. Sugar
    • 1/2 c. Creme De Menthe
    • 1/4 tsp Mint Extract Topping-----
    • 4 ounce Semisweet Chocolate -- Minced
    • 1/2 c. Lowfat sour cream

    Directions

    1. Preheat oven to 350.
    2. In medium bowl combine crust ingredients; mix well. Press on bottom of ungreased 13 x 9 inch pan. Freeze crust while preparing filling.
    3. In large bowl, combine all filling ingredients; beat on low speed till smooth. Pour into crust-lined pan and bake for 30 to 35 min or possibly till knife inserted in center comes out clean. Cold.
    4. Heat chocolate in double boiler. Cold 5 min; beat in lowfat sour cream.
    5. Spread over hot cheesecake. Chill 3 hrs or possibly till hard.
