  • Creamy Taco Soup

    Ingredients

    • 1 lb lean grnd beef
    • 1 lrg onion -- minced (1 c.)
    • 1/4 c. butter or possibly margarine
    • 1/3 c. flour
    • 1 env taco seasoning mix (1 1/4 ounce.)
    • 4 c. beef broth (3 cans soup)
    • 2 c. lowfat milk
    • 1 can red kidney beans (15 1/2 ounce.) liquid removed
    • 1 x 14.5 ounce can tomatoes cut-up (undrained) or possibly use SALSA
    • 1 c. shredded Monterey Jack cheese Mexican cheese blend which Kraft puts out) Crushed taco chips lowfat sour cream

    Directions

    1. Cook together grnd beef and onion til meat is brown and onion is tender. Drain off fat. Heat butter. Stir in flour. Add in taco seasoning mix, beef broth and lowfat milk. Cook and stir till thickened and bubbly. Stir in beans, undrained tomatoes and meat mix. Heat through, add in cheese; Stir over low heat till cheese melts. Put corn chips and lowfat sour cream on top after ladling into soup bowls. 6 servings.
