Creamy Taco Soup
Ingredients
- 1 lb Grnd beef
- 1/2 med Onion, diced
- 1 pt Lowfat sour cream
- 1/2 lb Velveeta, diced
- 1 can (15-ounce) chili, no beans
- 1 can (15-ounce) stewed tomatoes
- 2 can (16-ounce) pinto beans
- 1 can (10-ounce) Rotel (tomatoes and green chilies) Corn chips
Directions
- Brown meat and onion; drain. Add in canned ingredients. Mix well. Stir in lowfat sour cream and diced cheese. Put in slow cooker or possibly crockpot. Simmer for a couple hrs on low. Stir occasionally. (You may not want to add in the lowfat sour cream till the last 45 min of cooking time.) Serve with corn chips to sprinkle on top.
