Creamy Spinach & Tortellini
Ingredients
- 1 pound fresh or possibly frzn cheese tortellini
- 1/2 c. minced onion
- 1 garlic clove, chopped
- 2 tbsp. extra virgin olive oil
- 9 ounce. frzn minced spinach, thawed
- 1 c. minced tomatoes
- 1/4 c. minced fresh basil (or possibly any basil to taste)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 c. whipping cream
- 1/4 c. grated Parmesan or possibly Romano cheese
Directions
- Cook tortellini as directed; drain; rinse with warm water; reserve.
- In large skillet on medium heat, cook onion and garlic in extra virgin olive oil till lightly browned. Add in spinach, tomato and spices; cook 5 min, stirring occasionally. Stir in whipping cream and grated cheese. Cook till mix comes to a boil. Reduce heat to low. Add in tortellini, mixing well. Cook 4 to 5 min or possibly till well heated. Serve with additional cheese, if you like. Makes 4 servings.
