Ingredients

  • 8 ounce (4 c.) uncooked mini Lasagna noodles or possibly medium Egg noodles
  • 1 lb Grnd beef
  • 1 c. Minced onion
  • 1 c. Garlic, chopped
  • 1 c. (10 ounce.) cream mushroom soup
  • 1 x 4 ounce. can Mushroom pieces.and Stems
  • 1 lb Green Giant frzn cut leaf Spinach, thawed, squeezed To drain.
  • 1 x 24 ounce. container or possibly 3 c. Cottage cheese
  • 3 x Large eggs
  • 1 pkt 8 ounce. soft cream cheese with Chives
  • 1 c. 2.8 ounce. french fried onions

Directions

  1. Directions: Oven 350 Bake for 35-40 minutes.
  2. Grease 13 x 9 in. baking dish. Cook noodles to desired doneness as directed. drain. In medium skillet, cook, grnd beef, onions, and garlic.
  3. over medium-high heat till beef is browned; drain if needed. Add in soup and mushroooms; mix well. In large bowl, combine spinach, 2 c. cottage cheese and 2 Large eggs; mix well. In another large bowl, combine cooked noodles remaining 1 c. cottage cheese and remaining egg, toss gently. In greased dish layer half of the noodle mix, spinach and beef mix, repeat layering. Cover with foil. cook 35 - 40 minutes. Remove from oven and sprinkle fried onions over top. Return to oven cook additional 5 min. Let stand 5 min before serving.
