Creamy Scalloped Potatoes & Ham

Ingredients

  • Potatoes, peeled, thinly sliced into bite-size pcs
  • 1 lg. onion, minced finely
  • 1 pt. whipping cream
  • 2 c. warm water
  • 1 can cream of mushroom soup
  • 2 pound ham, cut into bite-size pcs

Directions

  1. Fill a Dutch oven, 3/4 full with potatoes, onions and ham alternated.
  2. Mix cream, water and soup with egg beater till blended. Heat in saucepan till hot, not boiling. Pour liquids over potato mix so all potatoes are covered. Cover baking dish and bake 2 hrs and 15 min at 375 degrees.
  3. Don't substitute cream with lowfat milk or possibly half & half. Mix will thicken with cooking. Stir after 1 hour of baking, replace cover and continue baking.
