Creamy Goat Cheese And Garlic Spread
Ingredients
- 1/2 lb Goat cheese,, such as Montrachet or possibly Boucheron
- 2 x Cloves garlic,, minced
- 2 Tbsp. Cream
- 8 slc Rustic country bread Extra virgin olive oil
- 6 ounce Mesclun greens
- 2 Tbsp. Snipped fresh chives
Directions
- With a hand blender combine cheese, garlic and cream and blend till smooth. Brush bread with garlic and grill. In a large bowl toss salad with extra virgin olive oil and good quality wine vinegar. Add in some snipped fresh chives.
- Divide among serving plates. Spread bread with goat cheese mix and top each salad with two croutes.
- Yield: 4 servings
