Ingredients

  • 1 1/2 lb baking potatoes peeled and cubed
  • 2 x cloves garlic peeled
  • 1 tsp extra virgin olive oil
  • 3/4 c. plain low-fat yogurt
  • 3/4 tsp salt
  • 1/8 tsp black pepper

Directions

  1. In medium saucepan, place potatoes and garlic; cover with cool water. Partially cover and bring to boil over high heat. Boil till potatoes are tender when pierced with a fork, about 15 min. Drain and return to the pan.
  2. Add in extra virgin olive oil and yogurt; beat with electric mixer till fluffy. Season with salt and pepper. Serve warm.
