    My garden is filled with fresh broccoli plants, so much broccoli and it is so sweet when picked fresh. During this cold weather not much is growing in my garden, except for lettuce, beets, artichokes, parsnips, and broccoli. The broccoli is very prolific and I used it constantly..Here is something that warms the tummy and is very easy to make.

    Ingredients

    • 3 Tbs butter
    • 1/2 cup finely chopped red onions
    • 3 Tbs flour
    • 1 Lb fresh broccoli
    • 3/4 lb Velvetta cheese cut in small squares
    • 1/4 lb cheddar cheese cut in small squares
    • 3 cup 2% or whole milk
    • Pepper
    • Salt

    Directions

    1. Cook broccoli in a pot with water and let it get very tender, drain and set aside.
    2. Melt butter in heavy pot
    3. Stir in onions and cook until tender
    4. Add flour and stir till blended
    5. Add milk, stirring constantly then add cheeses
    6. Add cooked broccoli to pot
    7. Salt and pepper to taste
    8. Serve with crusty bread and enjoy.
