Creamy Cajun Pasta

- 1 pound boneless skinless chicken breast, cut into small pieces
- 1 Tbls olive oil
- 1/4 cup onion, minced
- 2 garlic cloves, minced
- 2 tsp Cajun seasoning
- 1 cup tomatoes, diced
- 1/3 cup half and half
- 8 oz Spaghetti
Directions
- Cook pasta according to package directions.
- Heat a large skillet over medium high heat. Add olive oil, swirl to coat the pan. Add chicken and 1 tsp Cajun seasoning. Cook until chicken is cooked through, about 6 minutes depending on how big the pieces are. Remove chicken from the pan, cover to keep warm.
- Add onion and garlic to the hot pan. Saute until the onion is tender. Add tomatoes, half and half, and 1 tsp Cajun seasoning. Bring to a slow boil, stirring frequently and cook for a couple minutes. Add chicken back to the pan. Stir in pasta, and toss to combine. Top with Parmesan cheese, if desired.
