Creamy Asparagus And Chicken Soup
Ingredients
- 2 x skinned boned chicken breast halves cut 1/2" cubes
- 1 sm onion minced
- 3 x garlic cloves chopped
- 2 can asparagus cuts and tips - (10 1/2 ounce ea) liquid removed
- 1 can whole new potatoes - (14 1/2 ounce) liquid removed, sliced
- 1 can condensed chicken broth - (10 1/2 ounce)
- 1 1/2 c. lowfat milk
- 1/4 tsp freshly-grnd black pepper
Directions
- Saute/fry first 3 ingredients in vegetable cooking spray in a large saucepan till chicken is done.
- Process 1 can asparagus, potatoes, and broth in a blender till smooth, stopping to scrape down sides. Pour into saucepan, and stir in lowfat milk, pepper, and remaining asparagus.
- Cook over medium heat 7 min or possibly till mix is thoroughly heated.
- This recipe yields 5 1/2 c..
- Comments: For Creamy Asparagus Soup, omit chicken.
