  • Creamy Asparagus And Chicken Soup

    Ingredients

    • 2 x skinned boned chicken breast halves cut 1/2" cubes
    • 1 sm onion minced
    • 3 x garlic cloves chopped
    • 2 can asparagus cuts and tips - (10 1/2 ounce ea) liquid removed
    • 1 can whole new potatoes - (14 1/2 ounce) liquid removed, sliced
    • 1 can condensed chicken broth - (10 1/2 ounce)
    • 1 1/2 c. lowfat milk
    • 1/4 tsp freshly-grnd black pepper

    Directions

    1. Saute/fry first 3 ingredients in vegetable cooking spray in a large saucepan till chicken is done.
    2. Process 1 can asparagus, potatoes, and broth in a blender till smooth, stopping to scrape down sides. Pour into saucepan, and stir in lowfat milk, pepper, and remaining asparagus.
    3. Cook over medium heat 7 min or possibly till mix is thoroughly heated.
    4. This recipe yields 5 1/2 c..
    5. Comments: For Creamy Asparagus Soup, omit chicken.
    6. Yield: 5 1/2 c.
